Cauliflower Popcorn
My latest obsession...I've been making Buffalo Cauliflower Wings for a while, but this addition of hemp seeds, as inspired by West London restaurant Farmacy, takes the recipe to a whole new level. I love to serve them with a creamy ranch dressing, add them to salads, or even put them in a sandwich. I defy anyone who says that they don't like raw cauliflower to turn their nose up at these!
Equipment
- Blender
- dehydrator
Recipe Ingredients
- 1 cauliflower (500g-1kg)
- 1/2 cup sun-dried tomatoes
- 100 g tahini
- 2 T apple cider vinegar
- 1 t chipotle powder
- 1 t turmeric powder
- 1/4 tsp black pepper powder
- 2 tsp miso
- 2 tsp cane juice crystals
- 1 cup water
- 1 cup shelled hemp seeds

Recipe Instructions
- Pre-soak the sun-dried tomatoes for at least one hour, to soften them. Discard the soak water.
- Remove the leaves from the cauliflower. Cauliflowers can vary wildly in weight. If your cauliflower is small, you might find yourself with excess sauce, just keep it and use it as a dressing or a dip. This amount of sauce will work perfectly on a medium-sized cauliflower thats around 700-800g.
- Break your cauliflower into florets. You will find that once they are dehydrated, they shrink quite a bit in size, so you don't want them too small. I like to make some small and some bigger, so they are not all uniform in size. Any big florets will need halving or even quartering. Excess stems can be discarded.
- To make your sauce, put all the ingredients in the blender: the sun-dried tomatoes, tahini, vinegar, chipotle, turmeric, black pepper, miso, cane juice crystals, and water.
- Put your florets in a big bowl and coat them in the sauce. You will have to toss them well to make sure that they are evenly coated.
- When you're satisfied that you've mixed it properly, stir in the shelled hemp seeds. You can use less hemp if you want, but it's the hemp that really makes this recipe pop!
- Spread the cauliflower across two dehydrator trays, and dry for 8hrs. You can dry for less time if you want, then they are softer, and still very delicious.
- Store in the fridge in an airtight container, should keep for up to a week.
