Godfather of the Current Fermentation Movement
Sandor Ellix Katz has probably done more than anyone else alive to popularise fermentation. His book Wild Fermentation, published in 2003, was the inspiration for so many of us to get started. He has since then published a second book, The Art of Fermentation, even more of a Bible, covering every aspect of fermentation. Not only is Sandor an indispensable source of wisdom on fermentation methods, he is also very articulate on why including fermented foods in your diet is so important.
If you are hooked on making your own sauerkraut and kombucha, like I am, then this interview is a must-listen. Currently, I brew kefir, kombucha and jun, plus I always have some cheese on the go, and some kraut or kimchi (or both!). Along with flax crackers and raw chocolate, these are my raw staples that are non-negotiables in my kitchen.
